1 pound Personal Gourmet large cooked shrimp
1 cup rice flour
1 quart soda water
1/2 cup fresh coconut flakes (unsweetened)
Preparation
Make a batter out of the flour and soda water. Dip the shrimp into the batter, then coat in coconut flakes. Deep fry until golden brown in 350° oil.
Honey Mustard Horseradish Dip:
1 cup mayonnaise
1 1/2 cups honey
1/2 cup Dijon mustard
1/2 cup horseradish
Mix all ingredients well.
1 cup ketchup
1/2 teaspoon lemon zest
2 tablespoons freshly squeezed lemon juice
3 teaspoons prepared horseradish
1/4 teaspoon Worcestershire sauce
Hot sauce, to taste
Preparation
Combine the ketchup, lemon zest and juice, horseradish, and Worcestershire sauce in a small bowl. Add hot sauce, if desired.
Mix well and refrigerate until ready to serve.
