Recipes

2 packages (2lb) Personal Gourmet Chopped Sirloin
1 garlic clove, finely minced
1 medium onion, finely diced
1 red bell pepper, finely diced
2 tablespoons Worcestershire sauce
3 tablespoons ketchup
1 tablespoon hot red pepper sauce, or to taste
1/2 teaspoon ground celery seed

Preparation

In a large bowl combine all ingredients well. Form mixture into 8 equal patties. Refrigerate, covered in plastic until ready to grill. Grill or pan fry to desired degree of doneness.

3 packages (3lb) Personal Gourmets Chopped Sirloin
3 tablespoons steak sauce
6 extra-large egg yolks
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
4 tablespoons cold unsalted butter
12 hamburger buns

Preparation

Carefully mix the meats, steak sauce, egg yolks, salt, and pepper with the ends of a fork, but do not mash it. Lightly form each hamburger and lightly press into a patty shape. Make an indentation and put a thin slice of butter inside each hamburger, making sure the butter is entirely encased in the meat.

Heat a grill, broiler, or saute pan and cook the hamburgers for 3 to 5 minutes on each side until almost done. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes and serve immediately on buns

2 pounds Personal Gourmet chopped sirloin
1 tablespoon extra-virgin olive oil
 
1/4 cup brown sugar
1 tablespoon steak seasoning blend
Montreal Seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
3 tablespoons tomato paste
4 crusty rolls, split, toasted, and lightly buttered
Garnish: sliced ripe tomatoes, pickles,  Potato Salad.

Preparation

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops.

Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Potato Salad.
